Steel Cut Oats from Chapter 14
One of my co-workers got me hooked on steel cut oats. They are DIVINE. If you haven't ever had them, you should definitely try them. This is the recipe she and her husband make on a very regular basis. I don't eat fruit that's been cooked (I know I'm weird), but I hear that this is REALLY good. Enjoy!!
Cooking time - 30 minutes. Total preparation time - 45 minutes. Makes a 5 day supply. You can easily reheat and eat for breakfast.
One can of McCann's Steel Cut Oats
One medium (2 -3 qt.) pot
6 cups of water
1.5 cups steel cut oats
One large apple - washed, cored, and cut into small cubes
2 Tbls - Cinnamon - fresh from spice store if possible
1 Cup of Walnuts - (walnuts should be sliced in half for best flavor
1 cup raisins - organic has best flavor.
3 Tbls - honey. Really Raw Honey is best - health food store or order on-line
Bring water to a boil and slowly stir in the oats. Continue to stir occasionally and maintain full boil, adjusting the heat if contents rise, to avoid spillage. When the mixture has thickened slightly (approximately 3 minutes, cover and turn burner down to low/simmer. Simmer for 30 minutes. Stir oats every 7-10 minutes to ensure contents are cooked evenly and do not stick to the bottom of the pot.
Combine in bowl: Apple, Walnuts, Raisins and sprinkle Cinnamon on top. Place in refrigerator until oats are cooked.
When cooking is complete, take lid off pot and gently fold in the bowl of walnuts, raisins, apple and cinnamon. Place the honey on top of mixture, cover and let mixture settle for 5 minutes. This will also provide the honey an opportunity to slowly melt, if you are using a raw product.
Stir contents one more time and serve. Put left overs in the fridge.
