Welcome to The Diner!

Welcome to my new blog! I'll be posting all sorts of goodies here as we move through this story, including recipe, outfits, and other important things for the story! No copyright infringement is intended with any of the images used.


Here's the place that inspired The Diner . It's an actual place in UK - The Diner SOHO.


Cranberry-Orange Muffin Recipe



MUFFINS
1 cup milk
1/4 cup oil
1/2 tsp vanilla
1 large egg
2 cups all-purpose flour or whole wheat flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp salt
1 TBSP grated orange peel
1 cup chopped cranberries
Streusel topping

STREUSEL
2 TBSP firm stick butter
1/4 cup flour
2 TBSP packed brown sugar
1/4 tsp ground cinnamon

Cut butter into flour, brown sugar and cinnamon in medium bowl, using pastry blender or crisscrossing knives, until crumbly.

To make muffins:
Heat oven to 400 and grease bottoms only of standard size muffin tin or use baking cups.

Prepare streusel and set aside.

Beat milk, oil, vanilla, orange peel, and egg in large bowl. Stir flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy). Fold in cranberries.

Divide batter evenly between cups and sprinkle each with about 2 tsp streusel topping.

Bake 18-20 minutes or until golden brown. Immediately remove from pan to wire rack. Serve warm, if desired.

Recipe makes 12 muffins.
